Salty Caramel Sauce

  1. In a medium sauce pan, combine water, sugar,corn syrup over high heat.Just make sure all the sugar is wet.
  2. Using a wet pastry brush, wash down any sugar crystals that stick to the sides of the pan, or they will burn very quickly.
  3. Boil over high heat until the mixture turns a deep amber color, about 6 minutes.
  4. If one area becomes darker that the rest, gently swirl the pan, being careful not to let sugar stick to the sides.
  5. When color is achieved, remove sauce pan from heat and quickly whisk in cream, butter and salt.
  6. Pour into glass or other heat-proof jars and allow to cool at room temperature before sealing.
  7. Quickly wash pan and any caramel-covered utensils with very hot water.
  8. If you want to add a flavor to the caramel, add it after the cream and butter has been mixed in.
